MEAT AND DAIRY PRODUCTS


Dairy or milk products are those that are produced from mammals milk or contain it. Water buffaloes, goats, sheeps or camels are the most used animals to get this types of products. Milk, cheese, yogurt or butter are examples of this level of the pyramid food. Milk products are consumed in every part of the world except from some parts of Asia.

• Milk is maybe the most important food of this level. It is produced after a pasteurization process after standardization of the fat level. Sometimes bacteria like Streptococcus lactis are added. Milk can be divided into several foods based on the kind of product made


like cram, cheese or yogurt. Also, milk is divided depending on the fat content in it. Somes types of it are scalded milk, condensed milk, evaporated milk, khoa…

• Fermented milk is the one that is made with bacteria like thermofilic bacteria, often Lactococcus. Ymer, kumis or amasi are types of fermented milk but there exists much more.

• Yogurt is milk fermented with thermofilic bacteria. Most of the times this fermentation is done with Streptococcus. Qatyq, ayran or doogh are kinds of yogurts but there are more types.

• Cream, cheese, casein, custard and ice cream are other foods of this level of the food pyramid.

Foods that correspond to this level can cause health problems to people that are milk allergy or people that have lactose intolerance. Lactose intolerance people prefer not to eat this kind of food because they may develop gas, diarrhea, abdominal pain… There exists treated milk for this people. It is not good to abuse of this food because it may cause excesive cholesterol and satured fat which increase heat problems. Vegans and some religions avoid eating this king of food due to different reasons but experts confirm that it is vital for having a healthy life.
